Craving handmade noodles, soothing broths and fiery Korean flavours? Seoul Noodle Shop has been generating buzz in Singapore’s competitive Korean food scene with its signature Kalguksu dishes. But does it live up to the hype? We visited their Suntec City outlet to find out.

Kalguksu, which translates to ‘knife-cut noodles,’ typically refers to a hot noodle soup made with handmade wheat noodles sliced with a knife. This traditional dish dates back to the Goryeo era, a time when wheat was considered a luxury ingredient.

What We Ordered & Tried
We got the combo set, which came with 2 bowls of noodles and a pancake of your choice. Add in a Google review and you get a free mandu too.

Pork Bone Spicy Noodles
This was unexpectedly spicy with a hint of perilla in the broth yet it was quite satisfying.
The Good:
- A spicy pork bone broth
- 2 hefty chunks of pork bone with silvers of meat to pick from
- Good amount of noodles and broth
- The pickled radish, kimchi and rice complemented the main dish
The Not-So-Good:
- Could use a stronger umami punch, some might find the broth lacking in umami
- The noodles were soft and lacked chewiness
- Slight difficulty in picking off the meat from the pork bones without staining your clothes

Half Chicken Noodles
This was a comforting bowl of chicken soup for the soul, to nourish your body.
The Good:
- A hearty chicken broth
- Generous half chicken portion
- Good amount of noodles and broth
- The pickled radish, kimchi and rice complemented the main dish
The Not-So-Good:
- Was expecting the chicken to be fall off the bone tender like samgyetang but it was tough to pull apart
- The noodles were soft and lacked chewiness

Seafood Pancake
We got the seafood pancake, it came crispy filled with green onions and small chunks of seafood. It was not the best one we had but this was fairly decent.

Mandu
This was on the house after you submit a Google review. This was a substantial mandu with glass noodles, minced pork, carrots and chives in it. The skin wrapper was thin enough and the seasoning was adequate.
Final Verdict
Seoul Noodle Shop offers generous portions of noodles at reasonable prices. But there is still room for improvement to elevate the diners’ experience.
