Biang Biang Noodles, a specialty from China’s Shaanxi province, are renowned for their broad, hand-pulled noodles with chewy texture. The name “Biang Biang” mimics the sound produced when the dough is slapped against the countertop during preparation.
During a visit to Shaw Plaza in Balestier, I discovered Xi’an Famous Food, located on the second floor. Eager to sample their offerings, I ordered the signature Biang Biang Noodles with braised pork belly and the Kou Shui Ji (Saliva Chicken).
Biang Biang Noodles with Braised Pork Belly
The dish arrived with the noodles concealed beneath a generous layer of chili oil, fresh bok choy, and succulent braised pork belly. The noodles, resembling broad belts, were impressively thin yet maintained a delightful springy and chewy consistency. Tossing them in the aromatic chili oil resulted in a slippery, spicy experience, though I found the overall flavour profile slightly lacking in savouriness. The braised pork belly provided a rich, tender contrast, effectively balancing the heat from the noodles.
Kou Shui Ji (Saliva Chicken)
Despite its unconventional name, this dish is a staple in Sichuan cuisine, celebrated for its mouth-watering appeal. The name refers to the idea that the dish is so delicious that it makes you salivate. The preparation featured poached chicken slices generously coated in a spicy, flavourful sauce, delivering a harmonious blend of heat and savouriness. The portion size was ample, making it ideal for sharing or for those with hearty appetites. You can skip this dish if you are not looking to fill up your belly to the brim.
Xi’an Famous Food at Shaw Plaza offers an authentic taste of Shaanxi cuisine, with the Biang Biang Noodles standing out as a highlight. The combination of unique noodle texture and robust flavours makes it a noteworthy destination for noodle enthusiasts. While the Saliva Chicken adds an extra layer of depth to the meal, it may be best enjoyed when dining with a group due to its generous serving size.
