We read about this little bakery from 8 days featuring Waki Yoneoka, a Japanese lady, who was retrenched from her MD role in a fintech firm. She picked up baking as a hobby during the COVID lockdown period and decided to pursue her passion full-time instead of returning to a corporate role.
It was a hot Thursday afternoon when we were at Fortune Centre. The lunch crowd was filling in as the time approached 12pm. The bread shop occupied a small nook on the second floor but we managed to find it easily as the shopfront was visibly more appealing than the others. There were 2 customers in front of us and there was a display counter of their bakes, a small variety which helped us decided quickly.

We went for the Matcha Anko Shokupan (1/3 loaf) and the Kinoko (Plain). The bakes were not cheap as the owner uses Japanese flour and French AOP butter so we were hopeful our expectations would match the premium price point.

Visually the Matcha Anko Shokupan looked delicious. The Japanese milk bread was soft and the home made red bean paste was not too sweet, which is good. Save for the colour, I couldn’t taste any hint of matcha in the bread.
The Kinoko was shaped like a mushroom just like its name suggests. It is a brioche-like lightly sweetened bread that has the sweet flavour of French AOP butter. There is supposedly a nutty cookie topping to add crunch and sweetness. Forgive me but I didn’t particularly like this creation.
The owner, Waki Yoneoka, said in the article that she had difficulty finding nice bread in Singapore. I agree with her but whether Tsumiki Bake makes the cut will be determined by the consumers out there.
