Tucked away in Mandarin Gallery, Suju Masayuki brings a slice of Tokyo’s elite sushi culture to Singapore. Helmed by Chef Suju Masayuki, the restaurant offers a wide selection of Japanese dishes. They now have 2 restaurants with the latest one in Takashimaya.
Suju Masayuki first opened a small shop in Nagano Prefecture in Japan back in 2005. With a focus on traditional Japanese food, Suju Singapore specially imports its miso and rice from the local market in Nagano. Fresh fish is selected and delivered by air from the Toyoshu Fish Market in Tokyo.
Located on the fourth floor of Mandarin Gallery, Suju Japanese Restaurant offers a refined yet cozy dining experience that’s perfect for anyone craving home-style Japanese dishes with premium ingredients.
We were there this time for its lunch menu and we ordered the Shake Misozuke Yaki Teishoku (Marinated Charcoal Grilled Salmon with Miso Flavour) and the Kaisen Chirashi Don (Sushi Rice with Assorted Sashimi).
Suju Masayuki uses Koshihikari rice sourced from Nagano in Japan. The rice is cooked in small batches in a copper pot, which is an excellent conductor of heat and distributes the heat evenly. This results in rice that is cooked evenly making it more enjoyable in taste and texture.


The charcoal grilled salmon priced at $28 came with rice, pickles and a miso soup. The salmon was cooked perfectly in terms of seasoning and doneness. It was moist and tender and the meat just breaks off easily.


The Kaisen Chirashi Don ($42) was layered with quality seafood, you can taste the distinct flavour profile of the different types of fish used. It is not cheap but the premium is worth paying for the quality you get.
Overall this lunch experience was pleasantly the best we had at Suju. Suju Masayuki at Mandarin Gallery delivers on all fronts: authentic flavours, high-quality ingredients, and thoughtful presentation.
