Liu Shandong Beef Noodles Taipei Review: The Best Traditional Bowl Since 1949

When it comes to iconic Taiwanese dishes, beef noodle soup is at the top of the list and Liu Shandong (劉山東牛肉麵) in Taipei has been serving these delicious bowls of beef noodles since 1949.

Tucked away in the Zhongzheng District near Taipei Main Station, this modest eatery may not look like much from the outside, but its reputation is evidenced with the consecutive years of mentions in the Michelin Bib Gourmand.

We arrived here on a weekday evening before 6pm and we were the first in queue. We got a table in 5 minutes and our food was served in 2 minutes. The seating capacity is limited so be prepared to share a table with other customers.

Braised Beef Noodles (紅燒牛肉麵)

The flagship bowl. The broth is deep, dark, and rich, slow-simmered with soy sauce, garlic, and Chinese medicinal herbs. Unlike many other shops, Liu Shan Dong’s broth is clean and smooth, without overwhelming oiliness.

The beef chunks are fork tender with a good ratio of lean and fat. Each piece is generously portioned and stewed to the point where it nearly falls apart on your chopsticks.

The Noodles

Hand-pulled to chewy perfection. They’re thick, slightly firm, and al dente, every bite is satisfyingly bouncy and pairs well with the savoury beef broth.

Side Sauces & Pickles

On the side, you get optional chili oil and pickled mustard greens. Add a bit to your bowl and the flavours explode with salty-sour depth and a nice heat.

Atmosphere & Experience

Liu Shan Dong is old-school in the best way – tight tables, handwritten menus, and fast service.

Expect a short queue during peak hours, but turnover is quick and is worth the wait.
