King of Laksa Review: Freshly Cooked, Fragrant and Full of Character

Singapore is certainly not short of good laksa especially in the East side where you have variations of Katong laksa, but every once in a while, you come across a bowl that reminds you why this iconic dish remains a local favourite. My recent visit to King of Laksa at an inconspicuous multi-storey car park in Aljunied was one such experience.

What immediately sets King of Laksa apart is that every bowl is cooked to order. In an era where speed often takes priority, it is refreshing to see a stall that still prepares each serving individually. This attention to detail becomes evident from the very first spoonful. They also pride themselves on not using MSG, no added salt, no added sugar and no oily layer in the broth.

Unlike many versions where the coconut milk is pre-mixed and left simmering for extended periods, the coconut milk here is added à la minute.

The laksa broth strikes an excellent balance. It is creamy and comforting without becoming cloying, while still carrying enough spice and fragrance to keep every mouthful interesting. There is a depth of flavour that suggests a carefully prepared stock made from dried shrimps rather than simply relying on coconut milk for richness.

Another standout was the cockles. Many stalls either omit them entirely or overcook them, but King of Laksa serves them the way they should be enjoyed – rare, plump and beautifully briny. Their natural sweetness and seafood-y flavour provide a wonderful contrast to the rich broth and elevate the entire bowl.

The broth coated the noodles well, creating a harmonious combination of texture and flavour. Every ingredient felt purposeful, allowing the laksa itself to remain the star of the show.

While there are many contenders in Singapore’s competitive laksa scene, King of Laksa succeeds because it focuses on fundamentals. Fresh preparation, quality ingredients and a well-balanced broth may sound simple, but executing them consistently is what separates a good bowl from a memorable one.
