Oyster omelette or “Orh Jian” (蚵仔煎) is a Taiwanese night market staple, and few places are as highly recommended as Yuen Huan Pien (圓環邊蚵仔煎). Located near Taipei’s Ningxia Night Market, this iconic stall has been dishing out plates of oyster omelette for decades that attracts a long queue every night.

At first glance, it looks like any ordinary oyster omelette and what probably stood out, was the gooeyness of the omelette that was unlike any other we tried.

  • The egg layer is pan-fried to a golden colour while maintaining a soft centre.
  • The sweet potato starch batter gives it that signature gooey chew, soft and not clumpy.
  • There was shredded lettuce added in to give some freshness and texture to the omelette.
  • You get a strong taste of garlic with almost every mouthful.
  • Fresh oysters are nestled within, delivering a burst of ocean-y brininess with each bite.
  • It’s all tied together with their signature sweet-savoury sauce, slightly tangy and drizzled generously over the top.
Oyster Omelette Without The Sauce

While the oyster omelette is the star, Yuen Huan Pien also serves other local delights like braised pork rice (滷肉飯) and other oyster related dishes.

This eatery probably boasts the longest queue in Ningxia Night Market and is mentioned in the Michelin Guide. However we did not think the oyster omelette lived up to the hype. It only had a thin layer of egg with mainly gooey starch, a handful of oysters, it lacked crispiness and that eggy flavour you would expect from an nicely fried egg omelette.

Skip the long queue to dine in at the eatery, just go up to the cashier to order a takeaway and you would be given a time chit to return to collect your food.
